Granola is a wholesome and healthy option for a snack and this one will undoubtedly will be “gone in a day” delicious!
It can be often be expensive and sometimes have hidden ingredients if purchasing from a grocery store. Making it from home has never been easier or healthier. I first made granola a few years ago as homemade Christmas gifts for family and decided to give the cookie baking a break one year. I found a great recipe online and was surprised how easy it was to make. After tweaking it over the years I was able to make it grain free by leaving out the oats and adding a bit of coconut or almond flour to help with binding.
Sprinkle on yogurt, ice cream or mix with fruit for a healthy option. You can also substitute with dried cranberries or gogi berries if raisins is not your thing.
Gone in a Day Granola
- 1 cup coconut or almond flour
- 3/4 cup raisins
- 3/4 cup carob chips
- 1 cup chopped almonds
- 1 cup chopped walnuts
- 3/4 cup coconut flakes chopped or shredded coconut
- 1/2 cup raw honey
- 2 Tbsp coconut oil
- 1/2 Tbsp pumpkin pie spice
Preheat oven to 250 degrees. In a medium size bowl mix all ingredients with a spatula. Line a baking sheet with parchment paper and spread the granola mixture on the pan evenly. Bake for 30 minutes. Take out and stir granola to incorporate the ingredients again and bake for another 15 minutes. Remove from oven and cool. Serve and enjoy!
