Oatmeal Chocolate Chip cookies are the best homemade comfort food! Part healthy, part decadent. Let’s not kid around, there is nothing about 3/4 cup of shortening that is healthy, but there are oats for days!! It’s all about balance right? These are not made often in my house so I went for it, and for goodness sake… it is still cold and wet and miserable on the East Coast. Still perfect baking weather. 🙂
This is a basic and very common recipe. If it ain’t broken why try it differently? I have vivid memories of my mother making these on a winter or rainy day. They were full of oats and chocolate chips and quite good with a glass of plain cold milk.
OATMEAL CHOCOLATE CHIP COOKIES
- 1 cup packed brown sugar
- 1/2 cup sugar
- 3/4 cup vegetable shortening
- 1/4 cup water
- 1 egg
- 1/2 teaspoon baking soda
- 3 cups quick oats
- 1 teaspoon vanilla extract
- 1 cup chocolate chips ( I used mini chocolate chips)
Preheat oven 350 degrees F. Cream together sugars, egg, water and vanilla. In separate bowl combined oats, flour, baking soda then add to shortening mixture. Fold in 1 cup chocolate chips Drop tablespoon size dough onto lightly greased cookie sheet. Bake 12-14 minutes. Remove from tray to cooling rack.
